Liz's Potato Soup

Ingredients:

4-6 strips of bacon
1 good size onion
2-3 stalks of celery
1/2 cup chopped carrots
6-8 good sized potatoes cleaned, peeled and chopped
2 cans chicken broth

Season to taste with salt, pepper, thyme or dill.

Healthier version:

Omit bacon and sauté vegetables in canola oil
Use vegetable broth or water in place of chicken broth

Directions:

  1. Brown bacon in your soup pot and remove from pan and set aside
  2. In the same pot sauté until soft, but not brown, the onions carrots and celery
  3. Add potatoes
  4. Add chicken broth and water to cover
  5. Cook until the potatoes are tender, hand mash about half of the potatoes (in the pot)
  6. If desired thicken with: cream, cheddar cheese, or roux.
  7. Garnish with crumbled bacon, cheddar cheese, fresh ground black pepper

Makes:  8 bowls soup

Prep:  15  minutes
